You don't. Strip titles has been removed from the game. The 
"Bestow/remove title" option is just a leftover.

Exile will remove the noble from all positions, prevent them from 
getting any tax income, and denying them use of almost all realm 
functions (recruiting, banks, etc). However, they are not removed 
from the realm. The ruler will lose one point of honor per day and 
one point of prestige each week for so long as the exiled noble 
remains in the realm.
