It's for game play reasons.  It isn't very fun to be constantly wounded.

It's also because the healer's are much more powerful than any infiltrator or soldier and they won't let their charge be attacked again.  Scalpel's can be deadly.  

Olorin can get his whack at S'noe soon enough.
