Its been a long since Ive been a priest and I dont remember if you need to
be at a temple to change class to a priest.   But in short religions can
cross realm bounderies, have your nobles go join religions in other realms
if they really want to play a priest.  Founding a religion costs a decent
amount of gold so no regular noble would be able to afford it anyways.
