Keep in mind that your knights cannot manage their estates when they are not 
in your region.  In some realms (I don't know about your realm) it can be 
difficult for a knight to get home to manage their estate.  (IMHO, in some 
realms, region commanders really need to learn to stand up to the general who 
insists on keeping their knights away from home for weeks on end.)

Knights can check their estate settings when in the field.  If you have 
knights who continually ignore requests for the status of their estates, find 
a way to get rid of them and offer their share of the gold to knights who are 
more loyal.
