In order to become a knight you need three recommendations fron true 
nobles. This has, in and of itself, nothing to do with the H/P stats 
themselves. You need to sell Unique Items to true nobles until three 
of them give you a recommendation for nobility. That is all that is 
known about it so far. When someone actually makes it there, we may 
learn more. One of ym characters tried to recommend an advetnurer for 
nobility, but a bug prevented it from working. (Yes, I reported it on 
the bug tracker.)
